Hello my lovelies! I am slowly getting over my cold. My natural immunity has clearly dropped off significantly. Another good reason to never go into an office building again… It’s been hard to get work done. My sense of taste is always way off when I’m sick. Not the most helpful when you’re working on recipes! Today’s recipe is super simple. Two bowls, a whisk and a spoon. Half an hour later warm fluffy muffins full of juicy blueberries are there. It’s practically witchcraft. I’m starting in on my new stash of blueberries from my parents. They may make one or two more appearances. I’m not sorry.

Hello my lovelies! I know it’s raining right now, but picnic season is just around the corner so it’s a good time for portable foodstuffs. I made these muffins first a couple of weeks ago when we had a trip to Matiu-Somes Island and needed snacks. Muffins aren’t just good for picnics – they are also excellent for lunch-boxes! These zucchini muffins are moist and flavourful and punctuated with salty feta and sweet cashews. And there’s no harm in sneaking extra veges in here and there..

Better Banana Chocolate Chip Muffins

Muffins are a great opportunity to make some healthy changes to recipes. They don’t rely on sugar or fat so much for their structure so sugar can be reduced and butter can be swapped for healthier oils. I personally don’t have anything against butter (duh) but it’s not in the “eat lots”part of the food pyramid, right? Muffins are also superb lunchbox fillers, and having a healthy option for kids (and grown ups!) that tastes great is a win. A little bit of chocolate is balanced by whole wheat flour, fruit and low added sugar so i’m pretty sure we come out ahead. Muffins are easy to make – the trick is to have a light hand when mixing wet and dry ingredients.

The mini ones I made were inhaled in two days by a single person.. I froze the rest for my lunches – I just grab one out in the morning and it’s thawed by the time I want it in the afternoon!

Feijoas are such a Kiwi thing. As far as I know they don’t have a popularity anywhere else that rivals their cult status in NZ. They are a love it or hate it kind of food and I absolutely love them. Paired with zesty lime and coconut they are the star in these muffins. You may find them going incognito as Pineapple Guavas or Guavasteens in which case you should snap them up and make these tasty simple muffins!

What a week! We moved house during the week and Wellington being what it is that meant lots of things going up and down lots of steps. Thankfully that’s what movers are for! Now we are pretty much settled into our new home, which has a MUCH bigger kitchen and many other improvements so we are very happy campers.

This recipe is an easy one and the last thing I baked at the old house – the trouble was finding time to write it up for you in the midst of all the chaos. These muffins are not the world’s most glamorous baked good but they are easy and delicious and packed with oaty goodness.
