Hello my lovelies! One week til Santa. I trust your shopping is progressing a-pace and your halls are decked with an appropriate amount of Christmas cheer. If you still need a sweet last minute gift then this is your lucky day. I have been working on this recipe for a while now and perfected it just in time for Christmas. The universe provides. This nougat is sweet and nutty like the best of us. It has the perfect pillowy texture and a heady background of honey flavour. You will need a candy thermometer and a standing mixer (or a friend) to make this recipe. You will get a bit sticky. That’s fun and ok. While I bang on about weighing ingredients all the time, making candy is definitely where it will give you the best results. Ask Santa for a scale. You’ll never look back..

Honey Crunch

There’s more to rice bubbles than Rice Krispie Treats and Honey Crunch is proof! Sweet and trashy just like it’s American cousin, Honey Crunch swaps chewy for addictively crisp honey flavoured toffee. And with just 5 ingredients and less than 5 minutes cooking time what’s not to like?  I have been making this for years using this recipe (minus the vanilla) exactly as my Nannie told it to me over the phone when I was like 12. I’m not sure why it’s taken me so long to make it for you guys! As you can see from the picture you can press it out into whatever tin you want and cut it into whatever shapes you want. Dress it up with sliced almonds and coconut. Dip in chocolate. Colour it and make awesome Halloween gravestones or Frankenstein’s Monsters. Need cheering up? Add sprinkles just before pressing into the tin.

You guys! No really you guys have to try this brittle. It is the. best. candy. I have ever made. I’m a bit nuts for sweet/savoury crossovers at the moment and this is sooo good. Also for reference, every pun you come across on this blog is intentional. That’s how I roll. Before we begin, I’m going to go on a bit about one of me new favourite things. Gochugaru is a Korean chili powder that is super bright and fresh and has tonnes of fruity flavour and less heat than a traditional chili powder. You should go straight to the Asian supermarket and get some right now. It is perfect in this brittle and sprinkled on or in almost everything else. It is highly recommended on peanut butter toast..

Hello my lovelies! Sorry for the late post today – we just got back from Melbourne in the middle of the night so I’m playing catch up! I came home with a much heavier suitcase and a much lighter wallet… I also ate a LOT  of doughnuts (it was, ummm, research, yep that’s it) – my favourite was the Matcha and White Chocolate from Donut Shop – so face-stuffingly good. I also found a great little shop in the Block Arcade that sells scoop-your-own spice blends and fancy salts – heaven!

Focus Kearin! So today we have a perfect example of a simple and classic recipe that can be taken to all sorts of interesting places with a flavour twist. The basic meringue is super easy to make, and only has TWO ingredients. Then you just customise it however you like with flavourings and fold-ins. It’s the ultimate in rustic elegance (it’s my job to use pretentious phrases like that…).

Actually Honeycomb

As you may have read, I am a little bit obsessed with honey and this week we are putting the honey back in honeycomb! Hokey Pokey as it’s known down here in NZ is usually made with sugar and golden syrup and has a quite distinctive flavour. Honey is pretty much a sugar syrup right? So why can’t we make delicious actually honey-comb? Well the answer is obviously that we totally can! This is a really easy candy to make and requires no thermometer (yay!). Did I mention it takes no time at all to make?

I find this honey version much lighter and airier than the golden syrup version and there are a couple of tricks to making that happen. Make sure you dissolve the sugar completely at a low heat before boiling the syrup and when the baking soda goes in at the end mix it as little as you can get away with. C’mon, let’s make some candy!
